The most impressive dish of the night was Christy's black forest cake balanced on a chocolate dish balanced on top of chocolate balls balanced on top of another cake. She even installed real twinkling lights on the dish! I was terrified that she was going to drop it while carrying it to the judges.

Melissa & Amaury couldn't decide who to award immunity to, so they gave both Emelia & Christy immunity for tomorrow night!
 
This means that Alisha, Jana, Darren, Reece, John & Dan have to battle it out in tomorrow's elimination!

Tonight on Dessert Masters was an interesting evening. The contestants had to choose one of judge Amaury Guichon's amazing power tool techniques (that's what I called them anyway) to create amazing desserts. Emelia Jackson & Christy Tania had won immunity last night so they did not compete tonight.


These power techniques included: making a carnation flower using a mechanical cheese curler, water gold leaf dipping, automated turntable ruffle piping; and piping using a hardware drill.

 
Darren Purchese made a fabulous Winter Forest cake with the flavours of pistachio, pear and mint. Amaury’s drill technique reminded Darren of a frozen forest scene, and so he set about taking the judges to a frosty, festive forest wonderland with his pistachio cake, a pistachio and a pear ice cream, to be then covered in a mint chocolate spray coating. He used the drill piping technique for his main tree.

Vanilla Mascarpone Cream
Mint Green Chocolate Spray Mix
Mint Dark Green Chocolate Dip
Mint White Chocolate Spray Mix
Mint Chocolate Garnish

 
I also loved Alisha Henderson's magnificent Love Cake. The flavours in each tier are as follows: a butterfly pea cake with passion yuzu curd, a coffee soaked Tiramisu cake, and a spiced chocolate cake with figs, and rum soaked with hazelnut ganache and hazelnut crunch. She nearly got into a little trouble because she only used the piping technique on one tier of the cake and tried to hand pipe the rest for fear of running out of time and she had to redo it properly. Still the look and taste of her dessert saved her - this time. She is still my current favourite.
 
Another stand-out was John Demetrios's cake and chocolate carnation dessert. He very nearly ran out of time, so he decided to cash in his Mystery Box which gave him 20 extra minutes but this also means he no longer has this lifeline. His components included a crunchy hazelnut base, passionfruit and blood orange curd, toasted hazelnut ganache, hazelnut sponge, cognac syrup, praline mousse, passionfruit caramel glaze and the chocolate carnation on top.
 
Another highlight was Jana Lai's chocolate music box with a chocolate doll wearing a dress of piped frosting. There's no photo for this yet though.
 
The bottom two were Reece Hignell whose chocolate carnation and cake design were lacking in flavour and intensity, and Dan Pasquali whose gold rings on a cake pillow showed a lack of finesse and skill in using gold leaf to a desirable standard and his work was extremely messy and unrefined, leading to Dan's elimination.
 
Next time on Dessert Masters involves the magic of bubbles and it is a double elimination.

Tonight on MasterChef: Dessert Masters, the contestants had to make dishes that incorporated the theme of aeration, specifically bubbles! They also had to add soft drinks to the dish in some capacity.

 
The two winning dishes of the night were created by Reece Hignell & Jana Lai.
 
Reece's dish consisted of blood orange sorbet, meringue bubble nest, vanilla gelato, candied ginger gel, white chocolate powder, blood orange pearls, bubbly fruit and soda foam.

Jana's dish was consisted of coconut raspberry sorbet, coconut meringue balls, rice bubbles, raspberry yoghurt siphon, raspberry gel, enrobage framboise (some white chocolate concoction), raspberry froth, malt bubbles, and raspberry soda.

Emelia Jackson, Christy Tania & John Demetrios performed well and were somewhere in the middle.
 
Sadly, the two bottom dishes were those of Alisha Henderson & Darren Purchese who were both eliminated. Alisha's crumpet dish was lovely but too dense and not aerated enough, while Darren's choc-blood orange dish was also texturally flawed.

I've had a lot going on this week, so I haven't done an in-depth run-through of the semi-final of Dessert Masters. I plan to make it up by extensively covering the Grand Finale next Sunday.

Emelia Jackson offered the best trio of desserts inspired by life stories, with Christy Tania & John Demetrios also scoring well. 

Jana Lai & Reece Hignell did not fare so well with their creations so they were eliminated.

 

The Top 3 for the season are Emelia, Christy & John. Who will be the overall winner of Dessert Masters Season 2?

Tonight on MasterChef: Dessert Masters the three grand finalists (Emelia Jackson, John Demetrios & Christy Tania) had to create one green dish and one gold dish for judges Melissa Leong & Amaury Guichon, as well as Dessert Masters alumni Kirsten Tibballs, Adriano Zumbo & Gareth Whitton (the winner of Dessert Masters 2023).

Here are the green dishes!

 

Christy chose the flavours of kiwi fruit and white rum. Her dessert was considered to be overdoing it with the rum.
 
John chose the flavours of fig leaf and white chocolate. His dessert was considered to be flawless.
 
Emelia chose the flavours of apple, pistachio and verbena. Although she screwed up initially she managed to pull it together to create a pleasing whole.

Here is Emelia's gold Paris-Brest dish flavoured with chocolate and hazelnut praline. Visually stunning, but she burned the hazelnuts during the making of the praline.

Here is Christy's gold dish flavoured with macadamia, chocolate and mandarin. Her dish was amazing, but the dessert was overly sweet.
